As we get close to the school holidays and closer and closer to our trip, we are going with freezer surprise this week for dinner. We have so many bits and bobs of frozen meats and leftover meals that we need to clear out to make space for our pre-cooked camping meals. This is also great for the bank account! All we had to grab was fresh fruit and veg and the basics of bread and milk.
This week, the menu looks like this:
Monday: Marinated chicken stir-fry (hubby does an amazing marinate)
Tuesday: Lamb and spinach filo pie. A more basic variation on this meal but with a layer of cooked and spiced lamb mince
Wednesday: Vegetable korma curry
Thursday: Fish tacos
Friday: Home made pizza.
