School heads back this week for our kids. After the quiet, mellow days of the Easter break, we are bracing ourselves for the "winter grind" - the middle two terms on the year, with their colder weather and dark mornings, sport schedules and rolling assignments, definitely feel to be the longest of the school year.
So, with busy work schedules for H & I, plus rugby training being added back into all the boys weeks, I have tried to start-out on the front foot and have done two weeks worth of meal planning. This, combined with quite a hearty supermarket shop, a couple of cooked-ahead-basics (being Shredded Beef and Bolognese) plus a bunch of prepped lunch box options (chopped fruit bags, smoothies, banana cake etc) should, fingers crossed, see us get off to a pretty good start!
Dinners for the next two weeks look like this:

Nachos (using the worlds easiest Shredded Beef Recipe)
Baked Potatoes (using Bolognese cooked over the weekend)
Stuffed Pasta Shells
Cheese Souffle with salad
Lamb Shanks (cooked ahead and frozen)
Tomato Soup with Boiled Eggs
Spaghetti Bolognese (using last frozen portion of Bolognese)
Asian Chicken Meat balls
