Easiest and best taco beef

My boys love tacos. Its top of the list for Mr B whenever we ask him what he wants for dinner!

This shredded beef recipe rocks. Its awesome for tacos if you have a little time to spend in the kitchen. Alternatively you could do this in the slow cooker. The best thing about this, apart from the flavour, it that there is no browning of stuff.  You just chuck it all in the pot and stick it in the oven to cook.

1kg cubed beef
1 x packet of taco mix
2 x tins chopped tomatoes
1 x tin red kidney beans
Handful chopped coriander leaves

Preheat oven to 170degrees.
Add all ingredients into a casserole or oven proof dish. Add a little water so that the beef is covered. Stir so that its all nicely mixed together.
Cook for about 2-3 hours until the beef falls apart when you poke it with a fork.
Stir through the coriander once cooked.
Shred the beef with the fork.
Alternatively - add all ingredients into your slow cooker. Put on low then head off to work!

Serve up with tortillas, avocado, grated cheese, chopped tomato, lettuce and natural yoghurt.

Truly simple and yummy!
