More Cocktail files

Em and I were lucky enough recently to be able to have a girls night out in the city.These occasions are so rare (even though Em and I only live about 30 minutes drive away!) and I truly cherish them. The added bonus of having a girlfriend from school visiting from NZ was fantastic!

Em and I started our catchup at her place with a massive chin wag and a weird concoction of honey vodka and something fizzy (odd but delicious!). We then headed off to collect Nin and had a glass of yummy fizz with her and her mum.

The best of the night was the yummy fresh Mojito at the bar we went to. There were was salsa music, salsa dancing, loads of people, and to sip this lovely fresh drink was heaven!

Tall glass. Loads of ice, loads of mint and so refreshing!

The bar we went to had changed a lot since the last time I was there, so I can't say I'll be going back in a going to have to find somewhere new that makes such yummy Mojitos!

Here is recipe from Jamie Oliver's Drinks Tube:


  • 2 parts Bacardi Superior rum
  • ½ fresh lime
  • 12 fresh mint leaves
  • 2 heaped bar spoons of caster sugar
  • Dash of soda water
  • Cubed ice
  • Crushed ice
  • To Garnish: Sprig of Fresh Mint

How to mix

  1. Put the four lime wedges into a glass, then add the sugar and muddle (squish everything together) to release the lime juice
  2. Put the mint leaves on one hand and clap. This bruises the leaves and releases the aroma. Rub the mint leaves around the rim of the glass and drop them in. Use a muddler, bar spoon (or even a rolling pin) to gently push the mint down into the lime juice
  3. Half fill the glass with crushed ice and pour in the Bacardi Superior rum. Stir the mix together until the sugar dissolves
  4. Top up with crushed ice, a splash of the soda water and garnish it with a sprig of mint
