Moreish Madelines

On Sundays, if I have the time, I love to bake. There is nothing more satisfying that the smells of something wafting from the oven.

Today I thought Id give some Madeleines a go.You do need to have a Madeline tin, which is not something that all people have in their cupboard. Luckily I am a collector of random shapes and sizes of tins so just happened to have one in the cupboard.  

4 eggs
3/4 cup caster sugar
1 1/4 cups plain flour
2 teaspoons baking powder
zest of 1 lemon
180g butter melted and cooled

Preheat the oven to 180°C. Put sugar and eggs in a bowl and beat with electric beaters (or in your electric mixer bowl) for about 10 mins or until very pale and thick. Sift the baking powder and flour over the egg mix and beat on low speed until cool. Add the melted butter & lemon zest and continue beating until combined.
Grease madeline tin  and spoon approx 1 heaped teaspoon into each hole - dont overflll as they wont keep their shape. Bake for about 8-10 minutes or until golden.

Ideal served warm with a nice cup of tea (or packed up in a lunchbox!)
