Hey Pesto!


A quick and easy weeknight fix. A jar of pesto can be so versatile . My kids love pesto pasta night (and so do I after being at work all day!).

Basil, pine nuts, garlic, parmesan cheese, olive oil. Whack into a food processor and blitz.

Voila.

Stir it through hot cooked pasta, add sliced baby tomatoes.

Spread it on top of a piece of salmon and bake for 20 mins. Serve with veg or salad.

Cook some lamb cutlets and serve it on the side.

Add it into a basic muffin mix with some cheese for a savoury muffin. 

So multipurpose. Sooo yummy.

You can get some great store bought pesto’s..but you cant beat this easy home made version.

Recipe:
1 x large bunch of basil – leave picked and stalks discarded
4 x cloves garlic
100g pine nuts
¾ cup extra virgin olive oil.
120g parmesan cheese finely grated

Blitz all together until finely chopped and combined. Stir through the parmesan. Put into a sterilised jar and cover with about 1cm of extra oil (this keeps the pesto fresh). After each use, ensure that there is a good covering of oil.
